Fat ingredient solution

British owned clean label ingredient specialist Ulrick & Short has relaunched its range of fat replacers as a one stop solution for manufacturers of sweet and savoury foods of almost any description.

The company’s range of Delyte fat reducers and replacers are suitable as substitute ingredients for the majority of fats, including butter, oil and milk solids, while also enhancing the formulation with increased body and texture. Aside from the benefits of reduced fat and calories, these starches can be used to co-texturise in their own right thanks to their innate stability.

Delyte ingredients are suitable for a massive range of products: in bakery for cakes, ganache, fillings and icings; with sauces both sweet and savoury such as béchamel or caramel; for hot and cold dips and marinades; even ice cream and other chilled or frozen desserts – and much more. The range can replace up to 50 per cent of butter in cakes and 30 per cent of the oil in muffins, while the fat content in processed creams such as bakery and confectionery fillings can be reduced by up to one-third. Actively increasing the creaminess of sauces where desired, Delyte has proven in tests to have no adverse impact on taste or texture.

Like Ulrick & Short’s other ingredients, the Delyte range is designed to be neutral in application, working with and enhancing a food product’s composition to maximise flavour while minimising change to taste or texture. As well as supporting overall label simplification, Delyte can also help to create a healthier traffic light classification; in use it reduces not just the fat content but calories too, thus making it the ideal choice to help meet nutritional targets as well as production cost savings. As well as offering hot, cold and frozen process tolerance, Delyte is allergen-free and can be used in multiple hot and cold applications, offering retailers further functionality.
