Brightest young global confectionery talent to compete at iba

An array of young industry talent from around the world will be competing at the Junior World Championship of Confectioners, being held at the iba trade fair in Munich, Germany, for the first time next month.

Teams from Brazil, China, Germany, Iceland, Japan, Norway and Taiwan will be competing for the event organised by the UIBC, the international union of bakers and confectioners.

During the global industry trade event staged between 15-20 September, visitors will be able to watch contestants creating their sweet masterpieces. They will be competing in special show bakeries with large glass fronts that have been set up especially for the event, as one of the centrepieces of the trade fair.

The jurors will be live on location and explain the criteria being assessed (Hall B3, Stand 228), with several demanding culinary tasks set for the competitors. This will include delivering a showpiece with pralines, a cake, sculptured figurines and a dessert plate.

“Visitors to the trade fair will see the future of the confectionery trade, the young elite and certainly some of tomorrow’s stars here,” says Gerhard Schenk, deputy president of the International Union of Bakers and Confectioners (UIBC) and president of the German Association of Confectioners (DKB).

At its stand, the association is also organising an apprentice competition with elaborate cake designs and sweet presentations from apprentices in Germany. The winners of this competition will be decided by the visitors, with the successful candidates receiving their prizes later on during the trade event.

Among the other highlights of this year’s fair will be a number of innovations being displayed across equipment, ingredients and raw materials.

This will include a presentation from Barry Callebaut on its ruby chocolate range, which following its initial launch in Asia and Europe, is in the process of being introduced to US consumers, unveiling what has been hailed as the fourth category of chocolate.

There will also be demonstrations from companies including Valrhona SAS, Alexandra & Madlen Food, Chocolat Frey AG, Lübecker Marzipan-Fabrik, Odenwälder Marzipan Konditorei GmbH, Martin Braun Gruppe, Dreidoppel GmbH, Jacobi Decor GmbH and Dobla BV will also be represented at iba.
