Gelita gears up for IFT in New Orleans with new cocktail gummies

German-based ingredients business Gelita is returning to the IFT Food Expo in New Orleans, America, to showcase collagen peptides and gelatine used within sectors including confectionery.

The company’s stand at the event between 2-6 June, offers the chance to sample special non-alcoholic “cocktail gummies” available in six flavours.

As the business explained, its smart technology provides additional value for collagen peptides, offering attendees samples of the company’s segment of gummies within the beauty product market – made with Gelita Gelatine and Verisol bioactive collogen peptides. Furthermore, trade fair visitors can sample  dark chocolate coated raspberry yogurt protein nuggets.

Gelita explained that gelatine, which is a natural protein extracted from collagen, is available as a dry white powder which holds considerable application potential. This hydrocolloid swells rapidly in water, dissolves to a viscous solution when heated, then forms a gel when cooled – showcasing its many functional properties – as a binding, gelling and whipping agent; emulsifier and stabiliser. It is also regarded as a strong film and foam former.

It creates perfect textures, provides one-of-a-kind mouthfeel and enhances flavor release!  These properties, which cannot be mimicked – as well as its irreplaceable thermo-reversible gelling behaviour – make gelatine ideal in confectionery ranges such as gummies. The ingredient is also free from carbohydrates, cholesterol, fat, preservatives and purine.
