Global flavour inspiration for Prova Gourmet’s world-first emulsifier series

French ingredients specialist Prova Gourmet will use this year’s Sigep event to offer a world premier for its latest series of emulsified extracts targeting chocolatiers and pastry chefs, writes Neill Barston.

The business, which has been operating since the mid 1940s, is among a host of companies from around the global participating at the key, which opened yesterday and continues until January 20 in Rimini, Italy

Located at Hall B3, Booth 61, the business explained that its latest collection centres on on three iconic flavour profiles: Almond, Cinnamon and Cardamom, offering extra precision during use, optimum stability and an aromatic expression that stays true to the original raw material.

This innovation opens up new creative avenues for catering professionals and demonstrates the company’s Maison’s commitment to taste, authenticity and excellence.

As the company added, its latest extracts  are produced from essential oils emulsified. This technology makes them hydrophilic, stable and extremely easy to use, while preserving an aromatic expression faithful to the ingredient.

They can be used for a wide range of applications including mousses, ice creams, biscuits, ganaches, entremets, pralines) and usefully replace raw materials, simplifying manual tasks and streamlining production. For even more precision, their dosage is designed to be completely instinctive: Twenty grams is enough to flavour 1 kg of mixture.

“Our emulsified extracts provide essential aromatic precision: remarkable stability, no change to weight, and perfectly accurate flavour, explains Tristan Rousselot,” Executive Pastry Chef at Prova Gourmet.

Global inspiration
Inspired by cultures around the world and staying true to their raw material, the new extracts by Prova Gourmet deliver complex, genuine and intensely sensory aromas. The range includes its Almond extract, which reveals a classic woody note –an emblematic taste of traditional indulgent treats–, elevating perfectly iconic recipes, such as the Galette des Rois. Its flavour profile naturally pairs with apricot, cherry, pistachio and orange blossom.

Furthermore, as an  instantly recognisable spice, cinnamon provides a deep and gentle warmth. Prova Gourmet’s Cinnamon extract, made with Ceylon cinnamon, faithfully captures the ingredient’s essence: a precise balance between roundness and spicy intensity. Its formula significantly reduces infusion time and easily replaces powders or stick.

Finally, Cardamom extract highlights a floral, terpenic and airy
flavour profile with a signature lemony freshness. It electrifies ganaches,
lights up coffee, and will elevate a mango sorbet or a light mousse.
