Omya to show snacks nutritional enhancer at Food Ingredients Europe

Ingredients business Omya is using this year’s Food Ingredients Europe event to showcase its series of Calcipur range of calcium carbonates, designed to enhance the nutritional profile of snacks ranges.

As the company explained, the natural origin mineral particles positively influence anti-caking of powdered applications, as well as the texture and colour of bakery products, cereals, extruded snacks, convenience food and beverages.

Moreover, this highly concentrated source of calcium is a fortification agent with excellent bioavailability, and therefore supports bone health and the proper functioning of muscles and nerves.

From infant nutrition to applications targeting women and healthy agers: Calcium enrichment of foods and beverages is an ongoing trend, strengthened by consumers who are looking to support overall wellbeing and avoid health problems associated with calcium deficiency.

With its high elemental calcium content of approximately 40%, up to five times less Omya Calcipur is needed – in comparison to other available solutions – to achieve the same calcium dose in a finished foodstuff. This results in reduced costs and less impact on the sensory profile of the end product, while offering an option for calcium-related claims on pack.

The benefits of calcium carbonates for processing are numerous. Omya Calcipur is an effective anti-caking aid for powders and can also be used to reduce dust. Moreover, the mineral can improve the gelling qualities of fluids, and help correct pH-values. When used in snacks and cereals, the particles make for better extrusion too.

As the ingredient may intensify the taste perception of salty or sweet, it can also be used to reduce salt and sugar content for healthier products, such as cookies and other bakery goods. Another benefit of calcium carbonate is its ability to reduce acrylamide formation. This chemical by-product develops when starchy ingredients are fried, baked or roasted at high temperatures.
