Steviva unveils ‘game-changing’ ingredient

Steviva Ingredients has launched what it describes as a game-changing ingredient for confectioners and baking manufacturers trying to achieve clean-label sugar reduction.

The Erysweet+ Ultra blend is an ultra-fine mesh powder consisting of SteviaSweet 95-60 with Erysweet non GMO erythritol, a polyol that provides natural low-calorie sweetening and bulk. This blend of highly purified steviol glycosides, Steviva says, delivers a clean flavour that is free from bitter notes and aftertaste found in other stevia products.

Non-browning, Erysweet+ Ultra has a heat tolerance above 250 degrees Fahrenheit and folds into any hot or cold process. Designed to be a replacement for super-fine powdered sugar, the ingredient is ideal for tempering applications for chocolate, coatings, fillings, frostings, glazes, fondants and icings.

It is twice as sweet as sugar with just 0.2 calories per gram and is available in 20kg poly-lined boxes.
