Bell’s ‘Top 10 Flavours for 2009’ published
Global company Bell Flavors & Fragrances, which supply ingredients for the food, beverage, soap and cosmetics industries, has published its ‘Top 10 Flavours for 2009’.
The list of sweet flavours covers the confectionery, bakery and dairy sectors. The company also publishes top ten lists of savoury and beverage flavours. The methods used to compile the lists include tracking samples that have been requested over a 12-month period and trend scouting these flavours across four continents. They also include flavour trends from external sources.
Acai is at the top of the sweet flavours list, followed by the East Asian citrus fruit Yuzu. The other entries include Guavasteen (pineapple guava), red/black currants, acerola, lychee, the Amazon fruit camu camu, African marula, figs and persimmon ” known to the ancient Greeks as ‘the fruit of the gods’.
