A dramatic and colourful launch ceremony has been delivered for Barry Callebaut’s latest key innovation, Flavourcode cocoa fermentation, paving the way for a fresh generation of chocolate products, reports Neill Barston.

The company’s CEO, Hein Schumacher welcomed the development of its key industry offering, during the event today (October 27) at the historic Handelsbeurs venue, in Antwerp, Belgium, which signalled a strong forward momentum for the business.

Confectionery Production was on hand to play its part in the launch, which comes at a notable period of extended innovation for the company, as it moves to meet an expanded range of consumer demands across its global markets.

Significantly, the emergence of the new proprietary approach to cocoa processing – which was being staged alongside the finals of the World Chocolate Masters, comes as one of the company’s first major initiatives since the release of its Next Generation chocolate, which was released several years ago and received a limited commercial roll-out.

Attendees at the event launch were shown a series of potential applications for the new offering, including within chocolate ranges – which formed the first tasting opportunity, followed by chefs preparing options for ice cream, as well as biscuits, using a 70% cocoa recipe.

“Cocoa is an extraordinarily complex raw material, and understanding how to work and innovate with that complexity is a core part of Barry Callebaut’s expertise, explained the company’s CEO, who enthused that the innovation had significant application across the wider industry.

He added: “With Flavourcode, we are putting that expertise to work for our customers, opening up unexplored natural flavors within the bean, driving taste intensity, while delivering consistency and workability. Flavourcode 01 is just the beginning. We see significant potential to build this into a broader innovation platform across Gourmet and Food Manufacturing,”

As the event revealed, Flavourcode, which was given a grand entrance with an elaborate procession of colourfully-dressed actors take to the stage in an almost ceremonial unveiling of the new series, which will initially take its sourcing from Ecuador cocoa supplies, though it is anticipated that it will be applicable across its value chain.

Notably, as the Swiss-headquartered company explained, cocoa characteristics naturally vary between origins, harvests, and seasons, meaning flavours have, and will continue to bring different tastes from year-to-year, but flavourcode’s ethos is based upon exploring the power of fermentation to enable the best possible results from each harvest.

As the premium chocolate and cocoa firm observed, its latest innovation has been developed through a significant period of research into fermentation process over a series of years, the new line aims to unlock unexplored flavours within the bean, with greater depth and intensity, without added flavorings, and reproduces defined flavour profiles consistently at scale.

Moreover, the creation of the new line is far from an overnight formulation – its series has emerged following research across 24 markets indicates that consumers are showing greater interest in distinctive, complex and more immersive taste experiences, while brands and manufacturers are looking for new ways to create meaningful flavour differentiation across their portfolios.

As the business expanded, the new cocoa line has been devised in the wake of considerable engagement with the sector across generations, with the company’s roots in Belgium dating back to 1911. It has continued its strong focus on innovation down the decades, with the business set to make a significant return to the next edition of ISM in Cologne at the end of January 2027.

In addition, as the company added, the first commercial expression of the platform is Callebaut Flavourcode 01, developed for chocolatiers, chefs and artisans.  It delivers a layered flavour profile, opening with tropical fruit notes including passion fruit, pineapple, mango and ripe banana, followed by dried-fruit characteristics and a refined cocoa finish.

Flavourcode 01 is designed to do more than introduce a distinctive flavor. Its consistent sensory profile gives chefs and artisans a reliable foundation on which to create, helping them reproduce an intended taste experience time after time. It has been developed for applications including pastry, confectionery, ice cream and plated desserts.

Furthermore, Ramon Morató, Head of the Barry Callebaut Chocolate Academy Centre added an additional note of welcome for the series, which the company believed would hold considerable potential for the sector.

He commented: “For chocolatiers and artisans, a distinctive flavour is only valuable if it can be relied on in practice.

“Flavourcode 01 brings an unusual combination to the kitchen: a taste profile with real personality and the reliability needed to build it into pastry, confectionery, ice cream and plated desserts. That gives us more freedom to create – and ensures a taste consistency for consumers batch after batch.”
