Puree and simple

Ocean Spray’s Ingredient Technology Group has introduced a cranberry puree to meet growing demand for 100% fruit ingredients.

The puree delivers all the health benefits of the cranberry in a form suited to a wide range of applications, such as bakery and ice creams that can benefit from the attractive colour, rich texture and added fibre of the puree, which boosts shelf-appeal of baked goods. Thanks to the cranberry’s high acidity profile and low sugar content, it blends well with other fruits. Kristen Girard, principal food scientist at Ocean Spray’s Ingredient Technology Group comments, “The colour is maintained throughout processing. As a glaze or filling, the formulation provides cakes and pastries with fruity appeal and the puree’s gelling properties make it perfect for fruit preparations. The new puree is so versatile that manufacturers can really use their imagination when it comes to developing new recipes, both savoury and sweet.”
