British business Win-Win extends portfolio with key chocolate chip series

British-based alt-choc confectionery business Win-Win, have expanded its product offering in delivering a bake-stable  chocolate chip range, targeting   bakery and foodservice sectors, writes Neill Barston.

As the business noted, the innovative chips represent a key innovation through, maintaining their shape at high production temperatures without melting or spreading, ensuring consistent performance across a wide range of applications.

Following rigorous testing, Win-Win’s bake-stable chips deliver exceptional performance, and are resistant to spreading, burning, and fat bloom during baking in sweet treats like brownies, cookies, muffins, and other high-temperature applications. Available in Milk chocolate (with White and Dark variants available soon), and packed in convenient 10kg boxes, the bake-stable chips also sustain an exceptional shelf life of 12 months for reliable storage and usage.

As the business added, by re-imagining the conventional fermentation process used to create chocolate, Win-Win transforms abundant, sustainable ingredients such as rice and carob into couvertures and compounds that look, taste, and perform just like conventional chocolate, using up to 80% less water, emit 80% fewer CO2e emissions and are produced at scale in the UK. Win-Win also utilises traditional chocolate crafting techniques, such as roasting, grinding, refining and tempering to achieve their delicious chocolate-alternative.

By eliminating cocoa, the bake-stable chips offer the industry a sustainable alternative without compromising taste or functionality, supporting the move toward more ethical and environmentally responsible practices.
