Toffee flavoured gummies
13 March 2012 – A new candy, Tof’Gums, has been developed which uses gelatin from Rousselot. The gelatin provides perfect elasticity, a melt-in-mouth feel, and flavour release. This product offers many advantages for both consumers and the confectionery industry.
Gummies are generally available in fruit flavors. This new gummy is toffee flavoured, a flavour enjoyed by every generation of candy lovers. It melts slowly in the mouth and releases its caramel flavours, and the texture isn’t sticky nor chewy.
The product contains no artificial colouring or flavouring. With Rousselot gelatin there is no need for lecithin or other additives. The final gummy contains no E-numbers and therefore meets all consumer requirements for clean label products.
Another advantage is that Tof’Gums contain 20% less fat and carbohydrates and 15% less calories than a traditional butter caramel candy. The gelatin makes this possible; linking the water molecules and stabilising the structure, thus allowing reduced sugar and fat content.
