Fruit preparations for chocolate

German ingredients company Wild is offering its Maximum-Fruit’ fruit filings for chocolate bars in a number of flavour directions. It allows chocolate manufacturers the highest technically achievable fruit content in fillings for chocolate bars ” 25% fruit in the final product using a fruit preparation with 50% fruit content.

This keeps the manufacturers in compliance with the Cocoa Regulation, which specifies that a filled chocolate must contain at least 25% chocolate. It also is significantly more than the standard fruit content in filled chocolate at 5-10% fruit.
The high fruit content can be claimed on the packaging. WILD uses natural flavors for filled chocolate bars or pralines in its fruit preparations whose high stability makes them ideal for fillings.
A passionfruit filling, for example, is the perfect partner for dark chocolate. Milk chocolate goes well with an apricot filling and blueberry is the perfect complement to white chocolate.
