Olam Cocoa presents extensive series at Food Ingredients Europe

Global industry supplier Olam Cocoa is using this year’s Food Ingredients Europe as a platform for visitors to explore its portfolio, including ranges addressing demand for healthier options.

Among its series being displayed is the deZaan TrueDark, which is believed to be the first, natural (non-alkalised) dark cocoa powder.

Since 2015 it has been the leading option for recipes that require naturally intense cocoa taste impact and rich colour. And, for manufacturers catering to increasingly health conscious consumers, the lack of alkalisation meets their requirements for clean-labelling.

Uniquely crafted cocoa powders that support reduced dietary sugar intake, reduced sodium intake, and reduced calorie diets will also be presented.

Distinctive, single origin and whole bean roasted cocoa liquors: Cocoa liquor is the key ingredient in chocolate, and whether manufacturers are looking to display the beautifully aromatic bouquet of an Ecuadorian single origin liquor, the bold, smooth taste of a liquor exclusively from Ghana, or the complex richness of an expertly whole bean roasted liquor from Côte d’Ivoire, Olam Cocoa has the ingredient solution. Attendees will have the opportunity to do a direct side-by-side taste comparison between chocolates made from these different liquors.

In addition, Olam is also presenting its sustainability ambition for the future of cocoa, Cocoa Compass. Under the three pillars of Focused on Farmers, Empowered to Grow and Investing in Nature, it sets challenging goals for 2020, 2024 and 2030 that will help us achieve our vision: to create an environmentally positive, professionalised and quality focused cocoa supply chain comprised of farmers who earn a living income and whose children have access to education.

Edward Norder, Global Head of Cocoa Ingredient Development & Innovation, says: “Our passion is creating cocoa ingredients that provide intensity of taste that is second to none, and we are helping chocolate, confectionery and dairy manufacturers worldwide to excel in an environment of constantly evolving consumer trends. From meeting the demand for products with straightforward ingredients that are still powerfully indulgent, to helping them find the ideal cocoa ingredient for their specific recipe, we have the cocoa solution.”
