Cocoa milk enhancer
Tate & Lyle, a provider of speciality food ingredients and solutions to the food, beverage and other industries, has introduced a new milk enhancer concept with Fructopure fructose, designed to help manufacturers target younger generations with food products with fewer calories.
Tate & Lyle’s new cocoa milk enhancer with Fructopure allows for 30 per cent sugar reduction while maintaining a balanced sweetness profile. The fructose provides a clean, refreshing mouthfeel with no aftertaste and an almost instant sweetness that helps to intensify the cocoa flavour notes, the firm says.
The milk enhancer has a reduced sugar level, as fructose is sweeter than sucrose and less is needed to achieve the same sweetness. It has been designed to help customers create products that appeal to children, while its consumer friendly labelling and calorie reduction appeases parents.
The milk enhancer is in a liquid format that is easy to use and quickly dissolves in cold or hot milk. As an alternative to the usual powder concentrate, it gives manufacturers the opportunity to capitalise on the current trend to reinvigorate mature food and beverage categories, thanks to new and convenient formats.
