Fortuna wins Iba trophy 2009

German company Fortuna Maschinenbau Holding has won the Innovation Prize “Iba trophy 2009″ at the Iba bakery exhibition in Dusseldorf, Germany.

The jury awarded the prize to the divider and rounder Fortuna Magnus Soft (KI-T), which is equipped with a new dough dividing and moulding system. The machine allows a fully automatic processing of extremely soft doughs with a dough yield of 180 and more, something which has been impossible before with a classical divider and rounder.

A piston”dividing chamber system divides the dough into equal-sized portions of the required weight without adding flour. Afterwards, it is separated from the dividing chambers with the help of a compressed air and oil nozzle system for which a patent application has been filed.

Another key feature is the angular moulding channels that are arranged directly over the conveyor belt so that no concerted transfer of the un-moulded pieces of dough is required. Finally, the dough pieces are placed onto special mould trays for which Fortuna has especially developed a deposition unit. This innovative process, which works without any addition of dust flour was presented in operation for the first time live at the show.

A requirement for the application was that the innovation has only been launched in 2009 and has not been exhibited at any trade fair yet.
