UK-based premium confectionery business, Prestat, has moved to gain its own share of the Dubai Chocolate success story, with its own Kadayıf-filled truffle series this summer, reports Neill Barston.
The latest series, which is among entrants to our World Confectionery Awards for our 2025 World Confectionery Conference, has sourced premium cacao from Ivory Coast for its latest luxury creation.
Entries for our awards – which are across six categories, have a final deadline of 7 August, so any finished product entries require a sample to be considered for honours, with the (free) entry form downloadable and address to send it to via this direct link from our dedicated event website, confectioneryconference.com
As for Prestat’s latest offering, the company, which retained its Royal Warrant serving the British monarchy’s household, has used parent company Domori’s 38% single-origin Côte d’Ivoire milk chocolate.
Its indulgent centre features roasted Sicilian pistachio paste and authentic Turkish crispy kadayıf with creamy white chocolate.
This year’s World Confectionery Conference returns to Brussels on 11 September, at the Marriott Hotel, Grand Place, with its dynamic line-up spanning equipment, ingredients, policy, finished products and wider supply chain segments, including the cocoa market.
Now in its fifth edition, the event celebrates key sustainability, innovation and wider policy and supply chain developments within the confectionery and snacks sectors, at a time of notable global events that have prompted a rapid response from the confectionery industry as a whole.
Speaking on its award entry, Marie-Lorraine Michot, of Prestat, explained there had been an encouraging response to its latest release.
She said: “The core innovation of our new line is in the translation of a viral sensation into a sophisticated truffle. We saw the global excitement for crunchy, kadayıf-filled chocolate bars and embraced the challenge: to elevate the concept into a confection of true quality and permanence.
“The result is a deconstructed, bite-sized format that refines the experience, balancing texture and taste with superior ingredients. The experience begins with a crisp shell of Domori’s 38% single-origin Côte d’Ivoire milk chocolate. Breaking this shell replicates the satisfying snap of the original viral bar, revealing the true innovation within.”
