Professional online course from Barry Callebaut’s gourmet division unveiled

Artisan chefs and chocolatiers are set to benefit from a dedicated new Callebaut five-part online training resource to hone their professional skills, writes Neill Barston.
The new platform has targeted both those working across confectionery and bakery, which, according to the company will focus on a number of core areas of product development.
As the company noted, the chef-created resource linked to the Callebaut Academies, will offer support ranging from essential techniques and theory, to practical recipe applications, Each episode offers up to four hours of on-demand video tutorials, led by industry-leading chefs Ramon Morató and Romain Dufour.
The series spans everything from Chocolate Basics; Bonbon Masterclass; The Architecture of Entremets; The Art of Viennoiserie; and Biscuits Unlocked. An official, personalised certificate is issued upon completion of each course.

You can dip in and out around service and come back to lessons anytime, building skills step-by-step. It’s a powerful tool for both individuals and teams, whether you’re an experienced chocolatier or developing the next generation of chefs. The bite-sized format makes it genuinely accessible, giving chefs the confidence to apply these master chocolate and pastry techniques in their own kitchens.”
As the company noted, education and talent development have been central to the Callebaut brand, from hosting the World Chocolate Masters and UK Junior Chocolate Masters for more than 20 years to curating decades of pioneering in-person training. The launch of Callebaut’s new training platform represents a natural evolution of its training heritage.
