Puratos teams up with US-based ReGrained for bakery innovations

The Puratos group has confirmed a key partnership deal with US-based ReGrained, a specialist in sustainable upcycled bakery ingredients, combining to innovate new industry solutions, writes Neill Barston.

As the businesses noted, the collaboration has been born of a rising demand for specialist ingredients within the industrial bakery segment, as the sector continues to expand.

This has been underlined by US figures revealing that the industry grew to $55 billion in 2021, and is projected to grow at a CAGR rate of 4.8% by 2027.

According to the two firms, they have noted that consumer tastes and expectations for baked goods are rapidly shifting to more healthful, lower-carb and higher-fibre options in convenient
formats.

Concurrently, 42% of consumers report an increased awareness of the environmental
impact their food choices represent while consumer consciousness of the positive impact food
waste mitigation has on the climate crisis has grown 71% since 2019.

As ReGrained explained, its present range of applications includes upcycled flour that has been acknowledged as being notably versatile in its usage. It has notably been used recently in edible cookie dough and ice cream flavours with several of its industry partners.
