Global bake-off challenge set for iba trade fair

Some of the most skilled artisans in the world will be competing in the UIBC-Cup of Bakers held at this year’s iba trade fair in Munich, Germany this month.

The event, which is staged every three years, will see a dozen contestants from as far afield as Russia, China, France, Peru and the US, compete for gold medal honours.

They will be facing a universal challenge in hall B3 of the world’s leading trade fair for bakery, confectionery and snacks baking in show bakeries made out of glass, and also the verdict of a jury of experts. The trade fair audience will be cheering them on, with an awards presentation taking place on the Monday, September 17.

With the clock ticking down on the event, the respective associations have selected their candidates to participate in the international competition of bakers, and they are ready to go.

“We are practicing very hard for this, it is a major event that I am very much looking forward to.” says Daniel Plum who is competing for the host nation, Germany together with Maximilian Raisch for the gold medal. Encouraging entrants to indulge their creativity, this year’s theme is  “Universe”, with participants making breads, cookies, party and Danish pastries as well as a baked showpiece against a time limit.

The competitions will take place between 15-17 September at 9:30 am in the fully equipped show bakeries in hall B3, with four teams facing each other on each day. There will be a first evaluation in the iba-Forum by the jury at 1:00 pm and all baked goods will have to be finished by 4:00 pm. Then, the final judgment will take place. The visitors get the chance to experience the outstanding talent of the participants during the competition.

Participants include: Zhou Bin, Peng Fudong from China, Daniel Plum and Maximilian Raisch representing Germany, Maelle Dominin, Matthieu Morvant competing for France, with Japan’s Kiyoshi Fukui and Kenta Ishii also in the running. Korea will be represented by Myeong-Kyeom Kim and Sung-Chul Lim, the Netherlands have Michel Schröder and Hans Heiloo, while Ivar Bakke and Nikolai Melingen compete for Norway.

The Peruvian team consists of Renato Alonso Malquichagua Del Valle and Ysaac Rusbelt Montoya Herrera, and the Russian team features Marina Arbuzova, Nikolai Kozhevnikov.  Spain’s Enric Badía Elías and Francisco Recio Moreno, will be joined by
Muhammer Simsek, and Abdullah Akkus from Turkey, as well as  Eddie Batten and Natasha Rasmussen for America.

Speakers corner

In addition to this key event, there are new elements to the trade fair including the iba speaker’s corner. This will include discussion of current and upcoming trends, as well as challenges. During lectures and panel discussion, best-practice examples will be presented during the fair. All contributions will be simultaneously translated into German and English.

There will be roundtables and discussion rounds daily from 10 AM until 6 PM, as well as lectures from experts working in the craft trade
and the industry. iba visitors will receive information and ideas on how to move their business forward. Anyone who knows trends and challenges, and know-how to seize the opportunities, will continue to be successful in the future.

Success stories, influencers and lectures for the craft trade

Each day of the fair will have its own focus point. Craftsmanship is the focus on the first two days of the fair, with lectures primarily for small and medium-sized businesses. Bakers and confectioners, including the bakery Fickenscher from Münchberg and the bakery Kruste & Krume from Vienna, will present the secrets behind their success stories. In addition, the main guests of the iba.
In addition, virtual bakery tours will be visiting and be available for questions from the audience. These can be experienced in hall B3, where visitors can visit successful bakeries around the globe through VR glasses and 360-degree videos. From Monday to Wednesday, the focus will be on large companies, global players and the industry.
