Local supplier approval

A Cornish confectionery company has achieved Safe and Local Supplier Approval (SALSA) certification making its fudge and confectionery compliant with the requirements of more buyers.

Family run business Buttermilk Confectionery Co undertook the food safety standard in order to supply its products more widely, particularly to national high end retailers. SALSA is specifically designed for smaller food and drink producers that need to demonstrate that they are able to produce safe and legal food and continually operate to industry recognised and accepted standards.

Husband and wife team, David Goad and Tracy McDonnell Goad, run Buttermilk Confectionery, moving from London in 2010 to take the reins from David’s parents. Managing director McDonnell Goad says: “It’s really important to us that we are able to continue to use traditional methods to produce our small batch artisan confectionery and maintain quality while expanding our business in a commercially viable way.

“Buyers love the products – it’s great that we don’t have to change our method of hand made production to bring our confectionery to more people.” Moving into new premises on Bodmin Cooksland Industrial Estate in June 2014 was an essential first step in ensuring all production was compliant with the food standard regulation. Increased capacity at the new site ensures Buttermilk will be able to meet the demand from larger buyers, with an additional 800kg of fudge now produced each day.

She adds: “All of the team have worked hard to get ready for the SALSA audit so we’re thrilled to have passed. This is a big step forward and an exciting time; we’re able to work on the business and be in a position to sell our confectionery to companies where we were previously restricted.”

Using locally-sourced ingredients where possible, Buttermilk produces over 70 different flavours of smooth and crumbly fudge and a range of confectionery including tablet, brittle, toffee, chocolate clusters and chocolate-enrobed honeycomb.
